One Pot Chickpea Tiki Masala

Ingredients:
2 tablespoons extra virgin olive oil
1 medium onion, diced (approx. 1 and 1/2 cup)
1 teaspoon fine sea salt
2 jalapeños, cored and finely chopped
4-inches fresh ginger, minced (approx. 2 tablespoons)
4 garlic cloves, minced (approx. 2 tablespoons)
1 teaspoon garam masala
1 teaspoon ground cumin
1 teaspoon curry powder
1/2 teaspoon smoked paprika (or regular paprika)
pinch cayenne (optional)
3 tablespoons tomato paste
2 (15-ounce) cans diced fire roasted tomatoes*
1 cup vegetable broth
1 (15-ounce) can chickpeas, drained and rinsed
3/4 cup unsweetened coconut milk
brown basmati rice, plain dairy-free yogurt, fresh cilantro and warm naan for serving
Directions:
In a large pot, warm the oil over medium heat. Add the onion and the salt, stir and cook for 3 minutes. Add the jalapeño, ginger, and garlic then cook for 2 minutes. Lastly, add the spices (garam masala, cumin, curry, paprika, cayenne) and the tomato paste then stir together and cook for 2 more minutes.
Pour the cans of diced tomatoes with their juices and 1 cup vegetable broth into the pot. Bring to a boil and cook for 10 minutes, stirring intermittently.
Reduce heat to a simmer then stir in the coconut milk and chickpeas. Cook until heated through. Serve warm with brown basmati rice, fresh cilantro, plain yogurt and naan. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
*I like to use 1 can of no salt added fire roasted tomatoes to help reduce the sodium content of the recipe.

Heute gleich mal getestet und für sehr lecker befunden (Bild ist im Photos Thread zu finden)
Ich hab ca. ne halbe Dose Kokosmilch verwendet und normale Dosentomaten
zusätzlich zum Garam Masala habe ich auch noch etwas Ras el hanout in die Gewürzmischung gegeben
Die Portion wird reichlich! Bei einmal essen bestimmt für 4 Personen (wenn man tatsächlich auch noch Naan dazu reicht erst recht)

1 Teelössel Meersalz
2 jalapeños, entkernt und fein gehackt
4-inches frischen Ingwer, gehackt (ca. 2 Teelöfel) (1inch = ca. 2,5cm)
4 Knoblauchzehen, gehackt (ca. 2 Teelöffel)
1 Teelöffel Garam Masala

1 Teelöffel Curry Pulver
1/2 Teelöffel geräuchertes Paprikapulver (oder nicht geräuchertes)
1 Prise Cayenne (optional)
3 Esslöffel Tomatenmark
2 (15-ounce) Dosen gewürfelte Tomaten (fire rosted habe ich hier nicht gefunden, also normale genommen)
1 Tasse Gemüsebrühe
1 (15-ounce) Dose Kichererbsen, abgegossen und abgespült (ich habe 2 Dosen genommen, mit 1 war es mir zu "suppig")
3/4 Tasse ungesüßte Kokosmilch
Braunen Basmati Reis, natur Sojajoghurt, frischen Koriander, warmes Naan Brot
Directions:
In einem großen Topf das Olivenöl bei mittlerer Hitze erwärmen, Die Zwiebeln und Salz hinzufügen und unter Rühren ca. 3 minuten anbraten. Die Jalapenos, Ingwer und Knoblauch hinzugeben und weitere 2 Minuten braten. Zuletzt die Gewürze (Garam Masala, Kreuzkümmel, Curry, Paprika und Cayenne) und das Tomatenmark dazu geben und weitere ca. 2 Minuten anbraten.
Die Tomaten mit Saft, und die Gemüsebrühe dazu gießen, zum Kochen bringen und 10min. köcheln und ab und zu umrühren.
Die Hitze reduzieren und die Kokosmilch und Kichererbsen unterrühren, alles warm werden lassen.
Mit Reis, Koriander, Joghurt und Naan servieren.
Reste halten sich Luftdicht verpackt ca. 3 Tage.
